Now, let’s get into it!
After last weekend I figured we all may need something a little lighter, which immediately makes me think of pasta! 😂I know pasta’s not typically the lightest item on a menu but this one is summery fresh and so easy!
The Sauce. The tomatoes, garlic and olive oil plus a little pasta water creates the most creamy light sauce without having to add cream or cheese! When you season every element well with salt, pepper and red pepper flakes it creates the most flavorful summer pasta!
I served it with with a simple grilled chicken seasoned with your favorite spice blend and that’s all she wrote. If you, for whatever reason, need to add a green, I would pair this with an arugula salad, bagged Caesar salad or roasted asparagus. In my house, the more carbs the better so, it’s typically a little slice of olive oil bread and were ready to eat! This one is so quick and delicious I have a feeling you will be craving it again and again.
Capellini Pomodoro
Serves 4-6
Tools:
Large Sauce Pan
Large Stock Pot
Ingredients:
1/2 lb capellini pasta (angel hair)
2 cloves of garlic, sliced thinly
1 cup fresh diced tomatoes
2 tbsp olive oil
1/4 cup fresh basil
1/2 tsp salt (about 2 large pinches)
1/4 tsp pepper
red pepper flakes (optional)
grated parmesan (garnish)
Directions:
Start by boiling water and cooking 1/2 lb pasta according to package instructions.
While pasta is boiling, heat 2 tbsp olive oil on med/low and cook 2 cloves sliced garlic until fragrant about 1 minute.
Now, throw in 1 cup diced tomatoes and cook slightly for about 3-4 minutes! Season with 1/2 tsp salt and 1/4 tsp pepper and a few red pepper flakes.
Using tongs grab pasta and add it directly to your tomato sauce. Letting a little pasta water join the party will just make things even better. Let everything get nice and happy! Taste & season with more salt and pepper if needed.
Turn heat off and throw in 1/4 cup chopped basil and toss to combine!
Serve a generous portion in a bowl and garnish with more basil and a little parmesan cheese!!

If cooking chicken breast as the protein, I like to cook it first in the same pan I’m going to make my sauce in. Transfer it to a cookie sheet and let it sit in the oven on 225 degrees until it is ready to eat! This keeps in nice and warm without over cooking it!
Grilled shrimp seasoned simply with salt and pepper would also work perfectly with this dish!
Not a huge fan of tomatoes? You can cook them down longer so they become more of a tomato sauce, but trust me, when everything combines it works very nicely! I do not love tomatoes but I am a huge fan of this!
