This recipe, you guys, is probably my new favorite. Mark my words. I will be making this at least 1-2 times a month and I know you will too! It is literally a throw everything in the skillet and go type of dish. No dishes and so cheesy, flavorful and delicious. I love it and so did my children, which we know is the most important part! Not going to lie I’m pretty impressed with myself on this one. 😜
I like to chop my chicken into bite sized pieces, season with Mexican spices or a little taco seasoning and cook through in a large skillet. That is about the extent of the cooking. The rest is just dump and warm through. I love that the enchilada sauce adds so much flavor. The chicken is so juicy and seasoned and once again microwaved rice (cauli rice or quinoa would work too) saves the day! So easy, so quick and so flavorful. If you have leftovers, wrap them up in a burrito and toast or simply reheat. You can’t beat this one! Here’s how it goes. I’m warning y’all it’s easy! 😋
