I’m not sure if I am happy or sad about this being the last “cold weather” recipe of the season. You know I love me some comfort food but I will sacrifice that for the beautiful warm weather we’ve been having. So it’s time I start brainstorming springy recipes but for now this chicken soup should be on the top of your list for those few more cold nights!
There really isn’t much to say about this recipe other than the fact that it truly is so comforting and “rib sticking good” as my husband says. I use rotisserie chicken to make it extra quick and easy! It is ready in under 30 minutes and packed full of veggies!
The best part is that you can save the leftovers and reheat the next day just by adding a little water to a bowl and microwaving or reheating on the stove. The rice and chicken have time to soak up all the flavors so it really is even better the next day! Hope you all enjoy this super simple dish!
