Good Morning! I hope everyone had a fantastic week! I basically took the week off of cooking, which ended up being a wonderful break! I had planned to do 3-4 new recipes and it just didn’t happen. Sometimes you just need a break before getting back in the kitchen and that is ok! If you had an “off” week too this recipe is just the thing to get you back in the kitchen. So easy, so quick and so delicious!
Crispy Buffalo Chicken is one of my favorite things on all menus and these tacos did not disappoint! Chicken tenders breaded and cooked to crispy perfection in the oven, tossed in buffalo sauce and topped off with a crunchy slaw and a delicious jalapeno crema. This sauce y’all, is a must! It’s a simple sauce you can whip up in 2 minutes and it balances the tacos out perfectly. Keep this sauce and literally put it on anything!
THE CHICKEN. Since I felt like being lazy and not marinating or fully dredging the chicken I am using Greek yogurt as a binder to make my breading stick! It helps tenderize the chicken as well as creating a nice thick crust that gets nice in crispy in the oven. I will also share my stovetop method if you'd rather go that route! I will say that gets a little crispier since its pan fried but the oven worked great and I will say the easy clean up wins in my book!
I had all intentions of making this yummy slaw but in the end the dry slaw ended up being prettier and crunchier so honestly, bagged slaw took the cake on this one too. I’m telling you it doesn’t have to be hard to be fancy :)
OH, the tortillas. I just used a simple flour tortilla but corn would be great too! Make sure to char them up a bit before assembling your taco for an even more restaurant quality feel. I didn’t feel this needed a side because each taco is pretty filling but if you are in need. I would simply grill up some corn on the cob and serve it with some of the extra jalapeno crema!
