Good morning! I hope everyone has had a wonderful week! Easter is tomorrow and I am probably running around like a chicken with my head cut off in order to get everything prepped! It’s a love/hate relationship with hosting. If you are like me and maybe not as prepared as you’d like to be, go check out my last weeks newsletter for a full easy Easter menu! Quick and easy oven ribs, the most perfect potato salad and honey butter rolls! Click here for that!
Now, since I know the festivities will definitely make our Monday a little bit of a drag I wanted to give you guys a recipe that will perk you right on up! Literally, you will be looking forward to this one all day! One pot, ready in about 20 minutes and the flavors are out of this world!!! So dang good! I will be making this one on repeat for sure!
We’re doing a simple orange chicken that is so much better than takeout. I served mine with a microwaved brown rice but if you feel like making it from scratch go for it! You could also serve this with the fried rice recipe I shared a few weeks ago (recipe here) or some store bought dumplings. Either way it is a win!
When I say this chicken was juicy on the inside and crispy on the outside I am not lying! I think the secret was using chicken tenders instead of breasts. These are so easy to cut into bite sized pieces, stay so juicy and cook up quickly. All we need to do is whip up our sauce in a small bowl, dredge our chicken pieces in some corn starch. We throw them in a hot skillet to crisp up all over. Pour our sauce in and let it get THICK. Dinner is done and believe me the whole family is going to love this one!
