When you read this I will be living it up in the big apple 🍎, so let’s make this short and sweet. Literally the easiest recipe there ever was and the outcome is just fabulous. We’re making chicken tortilla soup!
Ok, I’m sorry for another soup recipe but I know we all love a simple comforting soup & we all need a classic tortilla soup recipe IMO. This is the best go-to recipe that can be made in a crockpot, instant pot or stove top.
I like to throw it all in the crockpot because honestly, there is just something so amazing about not having to do anything all day and get rewarded with delicious dinner, but if you’re not a planner; 20 minutes in the instant pot (exact same way as the crockpot). For the stove top method, add your veggies, spices, and broth to a large pot. Bring it to a boil, plop those chicken breasts in the broth, cover and cook on medium until chicken is cooked through, about 20 minutes. Shred and add your corn and voila dinner is ready.
