Texas is known for its Brisket but I find it to be such a difficult meat to perfect and I know no one wants to be sitting around a smoker all day. So were doing Pulled Pork in the crockpot! There is basically no work involved aside from mixing spices together and chopping an onion. Throw it in and forget it and be welcomed home to a perfectly pulled pork for not 1, but 4 dishes throughout the week.
But, I don’t like meal prep! I am not a fan of meal prep. I can eat leftovers once and then I am completely sick of them. However, this meat is so versatile were making BBQ, Mexican, Sandwiches and Italian with it and honestly, you would have no idea you were eating the same meat! It’s all about the spices baby.
What if Pork is a no-go for me? Use brisket! Brisket is usually much larger than a pork butt so I would start by cutting it in half and freezing the other chunk for later. Brisket can be done the exact same way it just may take a little longer to become tender. I would start mine early in the morning so it has plenty of time to cook. Check it after 8 hours and when it’s falling apart, it’s ready.
SIDE NOTE: Maybe the best thing about this “meal prep” is this cut of meat is CHEAP! I’m talking $8 for 3-4 lbs. Its usually a very tough piece of meat but when we cook it low and slow it falls apart and basically melts in your mouth! Just thank me later for the cheap grocery haul! :)

So we’ve got 2 dinners and 2 lunches to use up all this delicious meat. First for dinner were doing BBQ pulled pork sandwiches because how can we not?! Perfectly soft buns, a tangy pickles, juicy pork and sweet and tangy BBQ sauce. It is the most perfect combination. Pairing this with some 4 ingredient creamed corn. Summery and delicious!
Our second dinner is a quick and easy pulled pork ragu with perfectly al dente noodles. Basically 3 ingredients and FAB-U-LOUS. I paired this with roasted asparagus, but a side salad and some garlic bread works great here!
For lunches, I like to throw together a simple pulled pork quesadilla and a simple Cuban sandwich. Sounds like a pretty fab menu, am I right?
