School is back in full swing and the dinner scaries are too! It’s basically a race to get dinner on the table before a full meltdown occurs with one or both of my children. Or one of them has raided my pantry so many times that they wont eat dinner when it comes time. Hoping it’s not just me and betting that its not, we NEED a crock pot meal this week! Whether you have children or not this one is a must and literally it took me 4 minutes to throw together. You can absolutely not beat that!
We’re doing Crock Pot Fiesta Chicken. Honestly, this is one of those recipes that I’m embarrassed to even call a recipe because it is too easy, but I know we need it right now so here we are! Not only is it quick and easy, it is the best for meal prep or school lunches. Make a quesadilla with it the next day, put it on a salad or just eat it with chips. It is so darn good!
I will say, while it is really delicious, it isn’t the prettiest dish so I did struggle to photograph this but just trust me I promise that what it lacks in presentation it makes up for in convivence and flavor! I paired this with some microwaved rice (always doing the most over here ☺️) and flour tortillas. So easy, so delicious and perfect for those crazy practice nights! I hope you all enjoy!
