Oh. grilling season is upon us! What a wonderful time of year! It makes me so happy when I can grill something delicious while hanging outside with the fam. Give me a margarita and a baby pool and I am ready to go!
Now, corn is probably one of my favorite side dishes in the summer. It’s fresh, quick and sweet, salty and delicious. I mean you could totally just make corn on the cob with this and its just as good, but I thought I would spruce it up a bit! I also served mine with a baked potato because ya girl needs a white carb in my life! 😜
The corn salad is a simple grilled corn mixed with some avocado, tomatoes, purple onion with a little cilantro & lime dressing. The crunchy corn with the creamy avocado and the flavors in this is truly fab. Take a bite of steak with some corn on top - perfection!
Finally, I used a ribeye for this because it is my favorite cut of meat and in my opinion works best on a grill! However, you could use any meat your heart desires. A flank steak would be so good with this corn salad too. Throw it in a tortilla, um yum!! I used a cast iron skillet for this but obviously a gas grill would be much easier. I will make sure to share both methods below! I know you guys are going to love this one! Let’s get to it.
