Hi guys! We are back in the states and I am finally feeling like a human again. The minute we got home from our trip I got sick and haven’t left my house since.. soo it was a miracle that I got this recipe together. With that being said, obviously it’s so easy you can do it feeling 80%, which is typically all of us on a Monday or Tuesday night right?
When I’m not feeling like cooking I always go back to basics, and basics for me is usually mashed potatoes, green beans and grilled (boring) chicken. I decided I needed to fancy it up just a tiny bit for you guys and I don’t think I’ll ever go back! This chicken was perfectly tender, caramelized on the outside and so juicy! Seriously so much flavor packed into one little chicken thigh.
The Potatoes. Now I am a lover of mashed potatoes, truly the most perfect side dish there ever was so feel free to make those, but if you’re wanting something new and fun these roasted potatoes with ranch seasoning, cheese, bacon and scallions. 10/10! The oven does all the work and my kids devoured them!
The green beans. A classic and one of my second favorite side dishes and also the perfect way to get your kids to eat greens. They’re not the healthiest but hey they’re green after all!
