Summer has come early in Texas! I don’t know about where you live, but we have already almost hit 100 degrees over here and I have a feeling it’s going to be a hot one! When it’s too hot and I can’t think properly, it’s time to send the hubby out for some grilling 😅 I’m happy to stay inside in the air conditioning, drink some white wine! I love quick grilled recipes I know anyone can master! This is just stat.
This pork recipe is so delicious and easy it will most likely become your new favorite go-to grilled recipe! It takes a simple marinade, a quick grill and it’s done! Let it rest while you whip up a simple dressing, which by the way is perfection, and dinner is done in under 30 minutes.
BONUS! Pork tenderloin usually comes with 2 tenderloins in each package so this is perfect for a large crowd or leftover pork sandwiches. Throw your a pork medallion on a Hawaiian roll with some mustard (or honey mustard) and cheese and you have the most delicious lunch!
I made simple roasted broccoli and roasted potatoes on the side but you could grill potato wedges or whip up a simple mashed potato (recipe here). This would also be delicious over a salad tossed in the warm basil vinaigrette. The options are endless! Whatever option you decide will be wonderful but don’t skip the marinade or the vinaigrette - trust me!
