One Pot Bolognese
with roasted parmesan asparagus
Arguably my favorite meal to date! You cannot beat a one pot dish in my opinion! This one is loaded with veggies, the pasta cooks in the sauce AND it makes so much, that you can have leftovers for 2 days or stock your freezer! We’re pairing this with some fresh roasted asparagus that takes minutes to prep and roasts perfectly in the oven in no time! I love mine with a little bite but you can always keep cooking if you like yours a little more done!
What is Bolognese? Well, it’s a thick meat sauce that is usually cooked for hours to build rich flavors but no ones got time for that! I have some time saving tricks that helps makes this taste like it’s been cooking all day, but really it’s ready in about 30 minutes! This is the ultimate comfort dish and it’s so easy to make dairy free, gluten free or vegetarian! Also a wonderful meal to cook for guests or bring to a friend who just had a baby!
