Summer is in full swing over here and I don’t know about you but I feel like I am making about 100 meals & snacks a day! Meaning dinner needs to be quick and easy or I will not be cooking! This one-pot Cajun sausage and rice was so yummy, quick and basically zero dishes! Double the recipe if you want leftovers because it would be so easy to reheat and possibly better the next day!
I used cooked smoked beef sausage but chicken sausage would be delicious here! I also used minute rice (I know- not like me 😜) but it works!! Cooked quinoa would be great too if that is your thing. Plus, you could also use in frozen precut peppers and onions instead of fresh for an even quicker meal & no chopping.
Spice it UP!! This meal is all about the spices! If you season everything well, simple ingredients can be so delicious! I made my own Cajun spice blend (i’ll share below) but you know “Slap ya mama” is my favorite Cajun seasoning and once again, makes your life so much easier. If you’re feeding kids I would go a touch lighter on the spices as it tends to get spicy. My son couldn’t get enough of this one and I bet your family will love it too! Enjoy!
