This weeks meal is a spin on one of my most popular dishes on the blog. It gets lots of attention because a. it’s delicious and b. it’s so easy! It’s one of those dishes you would pay $30 for at a restaurant but now you wont have to!
I’ve got to know, are we mushroom fans? I know SO many people just love love mushrooms, I am not a huge fan. I may or may not have picked mine out of this but I will say the mushrooms add such a great umami flavor that takes this quick dish from good to great! As always, I have plenty of substitutes for this ingredient so don’t let these scare you off from this absolutely delicious meal!
Haven’t tried orzo? WHY NOT? It is one of my new(ish) favorite ingredients. It is a pasta that is shaped like rice, I mean how could you not like it. It’s delicate and gets super creamy kind of like risotto. It is perfect in this dish and soaks up all the delicious flavors!
Finally, we’re using one pot tonight so grab those paper plates and let’s get cooking.
