Hi guys!! So sorry for the late newsletter today. I’m not going to lie, running a new business, being a mom of two and keeping up with Brooks Lately has been a challenge lately! Plus the fact that my baby is ONE today is pretty wild. Time literally FLIES. Like how is it even possible that I have a 1 and 4 year old?! A crazy wild ride for sure.
You have a new business? not me shamelessly plugging it :) Yes, I started a super cute wallpaper company. Right now were selling on Etsy but will be creating my own website soon! Ok, now back to the food! As you all know, it is the middle of busy season for EVERYONE and sheet pan meals are just soo easy! So that’s just what were doing this week. Nothing fancy, but when you season and roast veggies properly it takes a blah dish to a delicious dish. Also, the balsamic glaze truly just makes it so do not skip!
The veggies. Obviously you can use any veggies you like but I used sweet potatoes, broccoli, and onion. Roast them on high and crisp them up and they’re just like candy! I just plopped my chicken breast right on top but you could also cook it on the stove. It does yield a much juicer chicken breast but if you’re feeling lazy just bake it!
I made this into a rice bowl and topped it with tons of balsamic glaze and it was so yummy satisfying and so quick! Not a fan of balsamic? I also make this with pesto and it is just as yummy, so give that a try as well! Have a great weekend. I’m going to celebrate my on year old! see you next week!
