Another easy one in the books! I love when I get to share such simple recipes with you that I truly love! Typically, sheet pan meals aren’t my favorite. I feel they lack flavor and can simply be boring. Let me tell you, this is anything but boring! Your taste buds will be exploding with flavor :) if you like sweet and salty this one is for you!
Now we all know that chicken and teriyaki are the perfect match but if you’re just craving something different or may be vegetarian, shrimp or tofu would work perfectly here! Feel free to alter it to meet your needs! Add greens, such as snap peas, asparagus, brussels sprouts for a pop of color added veggies!
There are a few key tips to make sure this comes out perfectly caramelized rather than soggy. Make sure you are NOT overcrowding your pan. If you want to make a large batch make sure to use two sheet pans. If all the ingredients touch they will steam rather than roast which is not what we want. Also, make sure to cube everything into similar sizes so everything cooks evenly.
Finally, I placed this over a bed of rice with a little extra teriyaki sauce and it was once again quick and easy. However, I debated making these into tacos and frankly that would be fabulous as well. Char up your tortillas, add on some coleslaw for an extra crunch and a little more teriyaki and enjoy!
