Happy Valentines Day friends! Would you believe me if I said this meal was EASY? I mean literally so easy! It looks and sounds like it’s going to be so difficult and what even is a red wine reduction?? Don’t over complicate it and you will rock this dinner!
Were using 2 pans tonight! Our steaks and sauce will be cooked in one skillet and your veggies will be roasted off in the oven. Everything will come together in under 45 minutes and you will enjoy it so much that you’ll probably forget you wont have to tip a waiter.
First, let me tell you, you cant “feel” if your meat is cooked. Even trained chefs use thermometers because they work! It is so incredibly hard to cook a perfect filet (or really any protein) without a thermometer.
I like my steak cooked medium. So anywhere between 120 and 135 degrees will be perfect depending on how you like it cooked! Digital thermometers are so easy to use and cost you nothing! Grab one at the store and use it! I promise you will fall in love with it.
Final thing about the meat. If were splurging on a filet then we better cook it correctly. It is OK to touch your meat! After you get the initial sear on all sides of my steak, I like to flip it every 3-4 minutes! This ensures both sides are cooking evenly because it is such a thick cut of meat!
Finally, our pan sauce, aka our reduction, it seems so fancy and tricky but when we use the right ingredients and the correct heat it really is impossible to mess up! We are using all those fabulous drippings in the pan from our steak, a little wine and dijon mustard to bring it all together! So quick, and delicious! Ok, enough chatting, let’s get cooking!!!
