Ok! All these Tik Toks about essays before recipes has me dying! 😂 I promise I won’t give you the life story of these meatballs because really there isn’t one. They’re honestly just a fabulous, simple meatball that are cooked in a muffin tin so the outsides get perfectly crispy & juicy on the inside. Plus they’re ready in 30 minutes! So stinking easy and truly to die for.

The best part? These are a stock your freezer kind of meal. It makes 24 meatballs so freeze half and throw them in the oven to reheat when you need a quick snack or simple spaghetti dinner.

I like using a mix of ground pork and ground beef for these. I think it’s the best combo but you could use chicken or turkey if you want. I will say, I haven’t tried that but I would assume it needs more breadcrumbs since that meat tends to be a bit more moist. You basically just want the balls to barely stay together so they are nice and juicy!

Finally, I am 10000% obsessed with polenta it is creamy and gritty and basically takes on the flavor of whatever you add to it! Today it’s parmesan and I mean wow FAB-U-LOUS. However, if you don’t like polenta (you better try it first) then you could pair these with spaghetti of course or mashed potatoes would be fabulous as well! I’ll link my simple mashed potato recipe incase you go that route. But I’m telling you, don’t knock polenta until you try it!!!!
