The weather is finally cooling off a bit in Texas so I am officially calling in soup season! I literally love soup for so many reasons but the fact that they’re quick and made in one pot with very little clean up means that I have a lot of delicious soups coming up for you this fall and winter. So, to kick it off were doing a 30 minute lasagna soup that is so comforting, healthy-ish and just the perfect weeknight dinner.
I love this dish because you can alter it to meet your families needs. I use Italian sausage but you could use ground turkey or chicken to make it a little lighter or leave the meat out completely and make it a vegetarian soup. Toss in spinach or kale for some greens and use any pasta variation you like. I used regular lasagna noodles but while I was eating it I thought, “tortellini would be perfect in this!” So if I could do it again, tortellini would be going in for the “cheesy” dynamic but plain lasagna noodles are just as delicious.
My husband despises ricotta but if your a fan, top the soup off with a dollop of some ricotta seasoned with a little Italian seasoning, nutmeg and a little parmesan cheese. It makes the soup extra rich and creamy and really tastes just like lasagna. I know this one is going to be a hit with your family, so lets get to it.
